THE WATER IN THE HOT WATER TANK MUST BE 80 DEGREES AND IS REGULATED BY A MECHANICAL OR ELECTRICAL THERMOSTAT. THE INTERNAL LEVER IS USED TO OPERATE THE STEAM NOZZLE TO PRODUCE FROTHED MILK. THE ROTARY VALVE CAN BE OPERATED WITH MINIMAL FORCE. IT IS VERY EASY TO USE. IN CONTRAST TO THE E61 VALVE, WHICH WAS PATENTED BY ERNESTO VALENTE IN 1961 AND IS STILL USED TODAY IN NEARLY ALL PROFESSIONAL MANUAL LEVER MACHINES. THE DRAWBACK OF THIS E61 SYSTEM IS THAT IT REQUIRES STRENGTH.
